Food Prep

This week I'm chowing down on chicken sweet potato meatloaf (same as the turkey sweet potato meatloaf sans the eggs and only a little bbq sauce and ketchup), scrambled eggs/egg whites, tuna with greek yogurt, baked chicken with a little PB2, brown rice, roasted asparagus, roasted brussel sprouts, homemade salsa....

I've been logging everything in MyFitnessPal and keeping my calories to 1800 a day.  The more veggies I eat, the fuller I am and less I need to eat during the day.  I got home from the gym last night and still had 600 allowable calories!  Don't you worry, I made light work of most of the calories and still woke up in the middle of the night hungry and STARVING this morning.  I can not wait to see the results in a couple of weeks....  BRING IT:)

And just for fun, look at that swelling in my damn wrist.  What the heck is going on?!  It felt a little funny when I was lifting last night, but it wasn't until I took my gloves off that I noticed a freaking grape under my skin.  Pretty sure this is the start of another cyst.  Fantastic.

Fueling Up

After all of that shooting, we decided to go out to dinner to celebrate our anniversary a day early.  We headed over the mountain to Wild Wolf Brewing Company.  Unfortunately, my mashed sweet potatoes were cold so we HAD to get two free desserts. Shucks.  We devoured fried Oreos (Jennie hates me!) and a brownie sundae.  Not so clean eating.  Oh well!


Okay, so back to dinner.  I had the cider brined pork loin with brussel sprouts and mashed sweet potatoes and Rich had the shrimp and grits.  Once the heat issue was resolved my meal turned out fantastic.  The shrimp and grits disappeared in about 2 minutes as well:)

We had a wonderful night out despite the rain!  And, yes, for all of you who see me in jeans day after day after day, I fricken wore a dress.  The shoes were a nightmare in the pouring down rain, but I sucked it up.  Take a good look because I won't be in another for months:)

Family Dinners


I'm finally really, really trying to plan out dinners for each week.  We eat out way too much, but it is really hard to coordinate cooking with all of our after school activities; the gym, after study, Rich's classes, softball practice, youth group, therapy for the kids, visitation for the kids, choir practice, and possibly track for E?!  This is one of the reasons why I am up a the crack of dawn every day!

So, I finally printed out a template for weekly dinners, filled it out, and promptly failed cooking dinner on night one!!!

The rest of the week looks like this...
  • Tuesday- Pot Roast with carrots, potatoes and celery.  
  • Wednesday- Oven fried chicken, quinoa, green beans
  • Thursdsay- Turkey burgers, sweet potato fries, and asparagus
  • Friday- Homemade pizza and salad
  • Saturday- Chili, rice, and cornbread
  • Sunday- Mrs. Rowe's :)
